Ingredients:

    • 1 cup lentils (toor dal, masoor dal, or a mix)
    • 2 tablespoons oil or ghee
    • 1 teaspoon mustard seeds
    • 1 teaspoon cumin seeds
    • 1 pinch asafoetida (hing)
    • 1 large onion, finely chopped
    • 2 medium tomatoes, finely chopped
    • 2 green chilies, slit (adjust according to taste)
    • 1 tablespoon ginger-garlic paste
    • 1 teaspoon turmeric powder
    • 1 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1 teaspoon cumin powder
    • 1 teaspoon garam masala
    • 1 teaspoon ground coriander
    • Salt to taste
    • 1 tablespoon lemon juice (optional)
    • Fresh coriander leaves, chopped (for garnish)
    • Water as needed

Instructions: Method:

    1. Preparation:

      • Rinse the lentils thoroughly under running water.
      • Soak them in water for about 30 minutes to reduce cooking time (optional but recommended).
    2. Cooking the Lentils:

      • In a pressure cooker, add the soaked lentils with 3 cups of water and a pinch of turmeric. Cook for 3-4 whistles or until the lentils are soft and mushy.
      • If using a pot, cook the lentils with enough water until they are soft, adding more water as needed.
    3. Tempering:

      • Heat oil or ghee in a pan over medium heat.
      • Add mustard seeds and let them splutter.
      • Add cumin seeds and asafoetida.
      • Add the finely chopped onions and sauté until they turn golden brown.
      • Add the green chilies and ginger-garlic paste. Sauté for a minute until the raw smell disappears.
      • Add the chopped tomatoes and cook until they become soft and mushy.
    4. Spicing the Curry:

      • Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and cook the masala for a couple of minutes.
      • Add the cooked lentils to the pan. Mix well and adjust the consistency by adding water if needed.
      • Add salt to taste and let the curry simmer for 5-10 minutes on low heat.
    5. Finishing Touches:

      • Add garam masala and ground coriander. Mix well.
      • Add lemon juice (optional) for a tangy flavor.
    6. Garnish and Serve:

      • Garnish with freshly chopped coriander leaves.
      • Serve hot with rice, roti, chapati, or naan.
