- 2 tablespoons oil or ghee
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 pinch asafoetida (hing)
- 1 large onion, finely chopped
- 2 medium tomatoes, finely chopped
- 2 green chilies, slit (adjust according to taste)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- Salt to taste
- 1 tablespoon lemon juice (optional)
- Fresh coriander leaves, chopped (for garnish)
- Water as needed

Instructions: Method:
Preparation:
- Rinse the lentils thoroughly under running water.
- Soak them in water for about 30 minutes to reduce cooking time (optional but recommended).
Cooking the Lentils:
- In a pressure cooker, add the soaked lentils with 3 cups of water and a pinch of turmeric. Cook for 3-4 whistles or until the lentils are soft and mushy.
- If using a pot, cook the lentils with enough water until they are soft, adding more water as needed.
Tempering:
- Heat oil or ghee in a pan over medium heat.
- Add mustard seeds and let them splutter.
- Add cumin seeds and asafoetida.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the green chilies and ginger-garlic paste. Sauté for a minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
Spicing the Curry:
- Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and cook the masala for a couple of minutes.
- Add the cooked lentils to the pan. Mix well and adjust the consistency by adding water if needed.
- Add salt to taste and let the curry simmer for 5-10 minutes on low heat.
Finishing Touches:
- Add garam masala and ground coriander. Mix well.
- Add lemon juice (optional) for a tangy flavor.
Garnish and Serve:
- Garnish with freshly chopped coriander leaves.
- Serve hot with rice, roti, chapati, or naan.
