In winter, many women have to face various period related problems. In such a situation, eating Pinni made from urad dal daily will be very beneficial. Pinni is a traditional Punjabi sweet dish made with whole wheat flour, desi ghee (clarified butter), and jaggery. It is often prepared during festivals and special occasions. Here's a simple recipe for making Pinni: So, let's get started!
Ingredients:
- 1 cup whole wheat flour (atta)
- 1 cup desi ghee (clarified butter)
- 1 cup powdered jaggery (gur)
- 1/2 cup chopped nuts (almonds, cashews, pistachios)
- 1/4 cup edible gum (gond), fried in ghee and crushed (optional)
- 1/2 cup grated khoya (optional)
- 1 teaspoon cardamom powder
- 1/2 teaspoon dry ginger powder (saunth)
- A pinch of nutmeg powder (jaiphal)
- 1/4 cup dry coconut (grated)
Method:
Roast Whole Wheat Flour:
- Heat a heavy-bottomed pan on low to medium heat.
- Add whole wheat flour to the pan and roast it on low heat until it turns golden brown. Keep stirring continuously to avoid burning. This may take around 15-20 minutes.
Prepare Ghee Syrup:
- In another pan, heat desi ghee. Add jaggery to it and melt it to form a syrup. Keep stirring to ensure that the jaggery is well combined with the ghee.
Combine Flour and Syrup:
- Once the wheat flour is roasted, pour the jaggery-ghee syrup into the roasted flour. Mix well to combine and ensure there are no lumps.
Add Nuts and Spices:
- Add chopped nuts, fried and crushed edible gum (if using), grated khoya (if using), cardamom powder, dry ginger powder, nutmeg powder, and grated dry coconut. Mix everything thoroughly.
Shape into Pinnis:
- Allow the mixture to cool slightly so that it can be handled. Take small portions of the mixture and shape them into round balls or pinnis with your hands.
Serve:
- Your Pinnis are ready to be served. Enjoy these delicious and nutritious sweet treats!
Storage:
- Pinnis can be stored in an airtight container at room temperature for several days. They tend to become firmer over time.
