Gujiyas are essentially made on the occasion of Holi.In Chhattisgarh, Maharashtra, Vihar, Andhra Pradesh, North India and South India, the tradition of making it in every house on Holi and Diwali has been going on for years. We make gujiyas filled with mawa, cardamom, sugar, figs, dates, nuts etc. In this we prepare flour, ghee, milk, jaggery, coconut powder, saffron, raisins, cashews, almonds and cardamom.Maida - 1 cup, Ghee - 1 tbsp (for Moyan), Milk - 4 cups, Jaggery - 1/2 cup grated, Coconut Bura - 1/2 cup, Saffron - 10-12 strands, Raisins - 8-10 chopped, Cashew nuts and almonds - 10-10 chopped, Chironji - 1 tsp, Green cardamom powder - 1/2 tsp, Ghee or oil - for frying.
Mix flour and ghee well. Knead a stiff dough adding milk little by little. Keep it covered for half an hour. To prepare the stuffing, heat two to three teaspoons of ghee in a pan. Add jaggery to it and melt it. Switch off the flame and add cardamom powder, coconut powder, saffron, raisins, cashews, almonds. Let it cool down. Apply ghee in the palm and rub the dough.Make small balls out of it and roll out small rotis. Place the stuffing in the center and apply water on the edge of the roti to stick it. Place the gujiya in the mold and cut the edges or fold it inwards with your fingers. Fry them in hot ghee or oil on medium heat till they turn golden brown. Cool and store in a jar.
