Falafel

If you want to make falafel quickly and eat it, then prepare it a night before. The main ingredient of falafel is chickpea.


Ingredients: 
One and a half cup soaked chickpeas, 

1 tablespoon sesame, 

1 teaspoon ginger-green chili paste, 

4 pita bread, 

salt as per taste. 

For Chutney: 
5-6 soaked Kashmiri chilies, 

8-10 garlic cloves, 

2 tbsp roasted sesame seeds, 

1 tsp sugar, 
1 tsp lemon juice, 

1/4 cup water, 

salt to taste (grind all ingredients together) . 

For salad: 
2 finely chopped lettuce leaves, 

2 tbsp finely chopped cabbage, 

2 chopped green onions, 

2 tbsp tomato puree, 

1 tsp lemon juice, 

1 tsp sugar, 

salt as per taste.
         1 cup chickpeas soaked overnight. Take out their water, take 1 cup of gram from it and put it in the cooker, also add a cup of water to it. Now boil it on high flame till one whistle. After the whistle, slow down the flame and cook it on medium flame for 6-7 minutes.

Process of making Falafel
        When the time is up, keep the cooker aside and put ¼ cup white sesame seeds in a pan and roast them till they change color. After roasting, take them out in a plate. Now take out the gram from the cooker and separate its water.Grind boiled gram, roasted white sesame seeds, ¾ tsp salt, juice of 1 lemon and 2 tbsp olive oil in a mixer jar. Now because all dry ingredients have been mixed in the mixture, so to dilute it add 1 tbsp olive oil and 2 tbsp thick curd and grind it again, hummus will be ready.

Process of making dough for Falafel

           Leftover chickpeas in a mixer jar, 2 green chilies, ½ inch ginger, ½ tsp red chili, 1 tsp coriander powder, 1 tsp cumin, 8-10 black peppercorns (if powdered, take ¼ tsp), 1 Add 1/2 teaspoon salt and ½ cup chopped coriander (if it is coarse, take it). Now grind them coarsely without adding water. It takes time to grind them because it is being grinded dry, so grind it while lowering it intermittently.
        Now take them out in a bowl and add 2 tbsp gram flour (gram flour gives good binding) and ¼ tsp baking soda (you can remove it). Mix the whole mixture well, the dough for falafel will be ready.
       Grease your hands with oil and knead the dough a little. Mash it and make it in the shape of a tree. Heat oil in a pan and put them in the oil, then fry them till they turn light brown. Make all the falafel like this, falafel will be ready.
             In this way falafel and hummus will be ready to serve. Put the hummus in a plate and add 1 tsp olive oil and a little red chili or chili flakes on top. Then enjoy its taste with falafel.
